Here are a few bits of advice to what I would do to maintain your mini moto in between use and races.

I would start by cleaning the bike and checking all the nuts and bolts are tightened fully. For example, from the bolts on the fairing to the bolts keeping the engine in place.

I would then move on to checking the brakes and adjusting them to my preference.

I would also adjust the handle bars and footpegs to how i would like them.

I would also check the spark plug and smaller parts of the engine aswell if I were racing to ensure that the bike is always performing fully for each race. At this point I would

If I had a water cooled bike I would check the radiator etc aswell.

Another important part of the checking over of your bike is to ensure that the chain is inline and the tension is correct. I have lost sprockets and axels when i have not checked the chain is aligned correctly and had to send my bike off for 4 weeks to get it fixed. So this is extremely important.

At this point you could also make the necessary changes to the gearing of the bike, changing the sprockets etc.

Finally I would check the tire pressure and ensured the bike started correctly and the kill switch works properly. Then start the bike and leave it for a couple of minutes for the engine to get warmed up.
